Lemon & Herb Tilapia With Roasted Italian Potatoes & Baked Asparagus
I’d love to slave away in the kitchen, preparing my family fabulous and wholesome homemade dinners each and every day. There’s something about a homemade meal that is just good for the tummy, and the soul! It’s even better when you have a recipe that you’ve made all your own. You know, the kind that you’ve made so many times you could do it with your eyes close… each time modifying it a little more until it’s just perfect! Those are the recipes that end up getting passed down over the years, and become your family’s very own version of the original.
Ahh, I can almost taste them now.
Only problem is, who really has time to cook those kind of meals these days?
Not me!
A huge majority of our life is either lived at actives and appointments, traveling to and from activities and appointments, and preparing or unwinding from said activities and appointments. While in the past I’ve found myself sacrificing the home cook meal for our busy and action packed life… I’ve been happy to find that that’s no longer a choice I’ll have to make.
Now, I can have it all.
General Mills has introduced a new alternative; The Good Table® products. These products allow you to create restaurant inspired meals, while still adding your own creative, homemade spin. Because these products cut down the cooking time of the main dish, I can spend more time on making side items to compliment it.
I recently used The Good Table® Flavor Lemon Herb to make a tilapia that was absolutely delicious. Using these beautiful tilapias that we picked up at Walmart, I dipped them in the sauce, tossed them around in the coating and baked them in the oven for 20 minutes. Couldn’t be any easier!
For the side items, I whipped up some baked asparagus and Italian roasted potatoes. Two perfect sides that complimented this lemon and herb tilapia perfectly!
Ingredients
- Asparagus
- Salt
- Pepper
- Garlic Powder
- Olive Oil
Instructions
- Start by lining a cookie sheet with aluminum foil. Chop the ends of your asparagus and line them up onto the cookie sheet. Drizzle with 1-2 Tbsp of olive oil, sprinkle with a little bit of salt and toss until evenly coated. Sprinkle a little bit of garlic powder and pepper over the tops. Bake at 425F for 10-15 minutes, until tender. This would also taste great with a sprinkle of parmesan cheese too!
Italian Roasted Potatoes
What you need:
- 5-6 medium sized red potatoes (cut into quarters)
- 1 tbsp of butter
- 1/2 packet of Good Seasons Italian Dressing Mix
How to prepare:
Bring a pot of water to boiling point and add your quarter cut potatoes. Cook for about 6 minutes, remove before they are completely done. Melt the butter in a large skillet over medium/high heat. Once melted, add your boiled potatoes and stir into the melted butter. Sprinkle half a packet of italian dressing mix over the potatoes and toss until well coated. Cook until potatoes are browned and fully done.
Voila!
A fabulous home cooked meal that didn’t require all day to prepare. It doesn’t hurt that it looks just as amazing as it taste!
