One of the many things I associate with the transition between summer and fall, is the food. Summer is usually filled with lots of light, quick and easy meals that we can eat on the go. Because the weather is so hot during the summer months, I try to keep the oven usage down to a minimum.
During the fall and winter, however, the kitchen gets more than its fair share of use. The family is inside more often during this time of year, and it’s nice to cozy up around the table with a nice, warm, home cooked meal.
I call these meals “feel good” food. The kind of food that is wholesome and filling. Things like casseroles, stews, and all things potatoes fit into this category for me. Since sitting around peeling and cutting potatoes for endless amounts of time isn’t one of my favorite pastimes, I use Simply Potatoes.
Simply Potatoes is a line of refrigerated, prepared potatoes that’s made by the Crystal Farms Company. I stick to this trusted brand, as I’m already familiar with using them for my cheese, eggs, butter and English muffins! You can find these potatoes in the dairy section of the grocery store. They are super easy to use, since there isn’t any peeling or shredding required! They are also made with real ingredients that are fresh, never frozen! A huge bonus in my book! One of my favorite recipes is Cheesy Potatoes Cowboy Casserole. This recipe is a super comfort food! Slow cooker meals are not only easy to throw together, they leave your home smelling as if you’ve been slaving over the stove all day! Just swap out the red potatoes in this recipe for Simply Potatoes and Voila! A nice and hearty home cooked meal that your entire family will enjoy.
- ½ tsp pepper
- 1 tsp salt
- ½ tsp all purpose seasoning
- 1 package Simply Potatoes Diced Potatoes with Onions
- 1 can of cream of mushroom soup
- 1 lb ground beef or ground turkey - browned & drained (we used 99% FF Ground Turkey)
- 1 can of diced tomatoes with liquid
- 1 cup canned corn, drained
- 1 can dark red kidney beans, drained
- 1 cup of shredded cheddar cheese
- Brown and drain your meat. Add the meat and all of the ingredients, minus the cheese, into the slow cooker. Cook on high for about 4 hours, or 6-7 hours on low. Then, add your cheese on top and cook for an extra 30 minutes.
Tip : Line your slow cooker with a slow-cooker bag, it will help tremendously with cleanup!
Of course, you need a crockpot in order to make a crockpot casserole. If you don’t have one, or could use a new one, you’re in luck! One lucky reader will win a programmable cook and carry slow cooker!
