Easy Breakfast in Bed Recipes for Mother’s Day

Looking for some simple ways to show mom some love this Mother’s Day? Some of my favorite Mother’s Day gestures are the ones that come from the heart. 

With Mother’s Day being a week away, I wanted to share some delicious recipes with you. Easy enough for breakfast in bed and tasty enough for the whole family to enjoy.

Triple Berry Crisp

Make mom a sweet, but healthy treat with this delicious crisp made with raspberries, blueberries, and strawberries.

Triple Berry Crisp

Prep Time: 15 minutes

Total Time: 65 minutes

Serves 12

Ingredients 

2 Tbsp. flour 

2 Tbsp. sugar 

3 Tbsp. butter or margarine 

3 cups Honey Bunches of Oats Cereal Honey Roasted

1 pt. (2 cups) blueberries 

1 pt. (2 cups) raspberries 

1 pt. (2 cups) strawberries, sliced 

1 cup sugar 

3 Tbsp. tapioca

Directions

Preheat oven to 350°F. Mix flour and 2 Tbsp. sugar in large bowl. Cut in butter until mixture resembles coarse crumbs. Stir in cereal. 

Mix berries in 2-quart shallow baking dish. 

Mix 1 cup sugar, 1 cup water and tapioca in large saucepan. Cook on medium heat until mixture comes to full boil, stirring constantly. Pour over berries; toss lightly. Sprinkle with cereal mixture. 

Bake 30 to 35 minutes or until hot and bubbly. Let stand 15 minutes. Serve warm. 

Honey of a Muffin

A light and fluffy muffin with a touch of honey is sure to make mom smile.

Honey Muffin

Prep Time: 15 minutes

Total Time: 35 minutes

Serves 12

Ingredients 

1-1/3 cups flour 

1/2 cup sugar 

1 Tbsp. baking powder 

1/4 tsp. salt 

1 egg 

1 cup milk 

1/3 cup butter or margarine, melted 

1-1/2 cups Honey Bunches of Oats Honey Roasted Cereal

Directions 

Preheat oven to 400°F. 

Mix flour, sugar, baking powder and salt in large bowl. Beat egg in small bowl; stir in milk and butter. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal. 

Spoon batter into greased or paper-lined muffin pan, filling each cup 2/3 full. 

Bake 20 min. or until golden brown. Serve warm

Crunchy Monkey Bread

Treat mom to this warm, gooey pull apart bread (with a crunch!)

Prep Time: 15 minutes

Total Time: 55 minutes

Serves 16

Ingredients 

1/2 cup sugar 

1 teaspoon cinnamon 

2 cans (16.3 oz each) refrigerated biscuits 

1/3 cup Honey Bunches of Oats Honey Roasted cereal 

1/3 cup chopped pecans 

1/3 cup raisins 

1 cup firmly packed brown sugar 

3/4 cup butter, melted 1 teaspoon vanilla 

Directions 

Heat oven to 350°F. Lightly grease 12-cup bundt pan. 

In a large plastic food storage bag, combine sugar and cinnamon. Separate dough into 16 biscuits and cut each biscuit into quarters. Place in the food storage bag and shake the bag to coat. 

In a small bowl combine cereal, pecans and raisins. Arrange in biscuit pieces in pan, layering the cereal mixture among the biscuits. 

In small bowl, mix brown sugar, melted butter and vanilla. 

Pour over biscuit pieces. Bake 28 to 30 minutes or until golden brown and no longer doughy in center. Cool in pan 10 minutes. Turn upside down onto serving plate and place in the center of table. Allow guests to pull apart the pieces of monkey bread to serve. Enjoy warm.
