Strawberry French Toast Bake - eMeals

Last week there was a sale on strawberries. Typically during the winter months, strawberries don’t have a very sweet taste so I avoid them. At .99 a lb, I decided to give it a try. Our meal plan that came out this week by eMeals had listed a Strawberry French Toast Bake recipe. I love breakfast for dinner and knew this was going to be a hit.

If you aren’t familiar with eMeals, they are a meal planning service. Basically you choose the store that you shop at, select a meal plan that works best for you (low-fat, classic, clean eating, etc.) and then eMeals will create a breakfast, lunch or dinner meal plan for the week based on the sales that are running at your selected store. Not only is eMeals making my dinner planning easy, they are saving me money by only suggesting foods that are on sale.

Preparation for the Strawberry French Toast Bake takes place the night before. While the planning sounded tedious, I personally felt like the wait was well worth it. My husband and kids loved it, in fact this is the first meal that we didn’t have leftovers from!

Here is the recipe for Strawberry French Toast Bake

Ingredients:

  • ½ container strawberries, diced
  • ⅓ c sugar
  • ½ package French bread, cut in 2” cubes 
  • 4 eggs 
  • 1 ½ c milk
  • 2 tsp sugar
  • ½ tsp salt
  • 2 tsp vanilla
  • 2 tbsp melted butter
  • cinnamon/sugar

Directions:

Mix strawberries  & sugar in bowl. Cover; let sit overnight. 

Place bread cubes tightly in a greased square baking dish. Beat eggs, milk, sugar, salt, and vanilla. Pour over bread. Cover & refrigerate overnight, 6-36 hours. 

The next day, Bake uncovered @ 350°, 45 minutes.

Remove from the oven, baste top with melted butter. Sprinkle generously with cinnamon/sugar. Return to oven for 5-10 minutes.

Serve strawberries over French toast.

    I tried this recipe yesterday and it is absolutely wonderful! My kids could not get enough of it and they keep asking when they can have “Strawberry Toast” again. Thanks for sharing!

    I have never eaten French Toast for dinner, but this sounds pretty tempting!!
    I wish strawberries were on sale here; I have been craving berries, but they are so expensive. Your photos make me hungry!!

    This sounds delicious (and easy), thanks for sharing! I’ve made a variation of this with blueberries and dollops of cream cheese… I may have to try a combination of both. :)

    I buy strawberries anytime they are on a sale like that! They are great for freezing, and using in smoothies. Then you can save the sweeter ones for just plain eating :)
