As most of you know, I’ve been on my weight loss and fitness journey for a while now. But, what you probably don’t know is that I’ve been struggling the last couple of months. I’m now down 72 pounds and it’s been hovering there, changes are slowing down quite a bit.

Don’t get me wrong, I’m not giving up and haven’t given up! I’ve just been looking for some different things to try during my journey to shake things up a bit.

In my mission to change things up a bit, I’ve been working to switch out some of my regular foods for better options. My favorite morning breakfast was maple and brown sugar oatmeal. So so good :)

Part of eating better was to cut out sugar and foods that are filled with a bunch of crap. Easy enough, right?

It has been daunting to do this, overwhelming and introducing new foods like steel cut oats hasn’t been very exciting.

Steel cut oats are gross. Sorry, they are. 

But, when you combine a world of spices, a little bit of apple and a little honey, you can create a world of goodness right in your belly. 

This morning, I had some extra time and cooked these up on my stove. My entire house smelled like apple pie and the taste was just as amazing. This is serious comfort food right here and perfect for my active workout days!

Steel Cut Oats for One - Warm Apple Pie Oatmeal

Ingredients

  • 1/4 cup steel cut oats
  • 1 cup water
  • 1 small apple - diced
  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • honey for taste

Instructions

  1. In a saucepan, combine all ingredients except for honey. Bring to a boil, then reduce heat and simmer until the oats are entirely cooked.
  2. Top with a few apple pieces and a little bit of honey for added sweetness. If your apples are sweet, you won't need much.
