Pecan Puffs Cookie Recipe

I am working with Fisher to share my own Pecan Puffs cookie recipe using Fisher Nuts and tools they provided. However, my opinions are entirely my own and I have not been paid to publish positive comments.

Have you ever craved Christmas cookies in the summer?

Maybe it’s because I’m still breastfeeding, or maybe it’s because Christmas is my favorite holiday, but I was craving some Pecan Puffs …BAD.

Pecans are kind of the star of this show so I was happy to take Fisher Nuts Pecan Halves for a spin. These gorgeous halved pecans came in a handy re-sealable bag. I was pleasantly surprised that very few were broken and it seemed a shame to chop them up for my recipe. They would have been lovely on some chocolate caramel turtles. YUM!

This Pecan Puffs cookie recipe is pretty easy and always a crowd pleaser. I’d highly suggest using Fisher Nuts Pecans, Walnuts, or Almonds found at your local grocer for your holiday baking (or in my case, not-so-holiday baking).

    One of my favorites is:
    Chilled Raspberry Soup

    Ingredients:
    4 cups fresh raspberries

    1/2 cup sugar

    1/4 cup cranberry juice cocktail or other 100% berry juice.

    1 cup sour cream

    Blend berries, juice and sugar in a blender until smooth, then pour into a bowl, cover and chill it for two hours. Spoon into pretty serving dishes, clear is best, and garnish with a dollop of sour cream and a berry or two.

    One of our favorite summer recipes is a cool whip cheesecake! It’s basically cool whip and cream cheese blended in a pie crust that is refrigerated! We make it plain and then any toppings can be added! Thanks!

    When peaches are in season: cut in half, brush lightly with vegetable oil. Put face down on a grill. After a few minutes, turn them over and put a dab of butter plus cinnamon and brown sugar in the indention. Grill a few minutes longer. If you feel REALLY crazy, toss a few almonds on top. Mmmmmmmmm.

    I love making fruit salads in the summer months because there are so many fresh fruits to choose from. My families favorite is :

    2 boxes of Raspberry Jello
    2 Lg. Red Delicious Apples -Diced
    2 Navel Oranges -Diced
    1/2 C of Pecans- Diced

    Mix jello as normal and allow to soft set while dicing fruit and nuts.
    Once Jello is soft set mix in fruit and nuts and allow to fully set.
    Serve with a small dollop of whipped cream if desired.

    We loved making an icebox dessert that we found on Pinterest.

    It calls for:

    1 (15 oz.) package Oreos, crushed
    6 T. butter, melted
    1 (8 oz.) package cream cheese, softened
    1 c. confectioners’ sugar
    1 large (5.1 oz.) box instant chocolate pudding + milk to prepare, as specified on the pudding package
    1 large (16 oz.) container Cool Whip whipped topping

    1. Set aside about 1/4 cup crushed Oreos. Mix remaining crushed Oreos with the melted butter. Press into the bottom of a 9×13″ pan.
    2. Combine cream cheese and confectioners’ sugar; mix well. Fold in 1/2 of the Cool Whip until well combined. Spread the cream cheese mixture over the crushed Oreo layer. Chill for 20 minutes.
    3. Prepare chocolate pudding according to package directions. Spread over cream cheese layer. Chill for 20 minutes.
    4. Spread remaining Cool Whip over the pudding layer. Sprinkle reserved crushed Oreos on top. Chill for 8 hours or overnight before serving.

    We got the recipe from The Kitchen is My Playground, but unfortunately, ours didn’t turn out so well but it was still delicious!

    My Favorite!

    Banan Bread Pecan Muffins

    Serving Size / Yield
    12 servings

    Ingredients
    3 or 4 ripe bananas
    1/3 C. melted butter
    1 C. sugar
    Raisins and/or Pecans (optional)
    1 egg beaten
    1 tsp. vanilla
    1 tsp. cinnamon
    1 tsp. baking soda
    Pinch of salt
    1 1/2 C. flour
    Directions
    In a large bowl, smash bananas. Mix all the ingredients in, adding the flour last. Mix together with a fork. Pour mixture into a greased 4×8 loaf pan or any size muffin pan. Cook at 350 degrees for 45 minutes or until desired color.

    I like to do the cuppa cuppa cuppa stick recipe. And throw my fresh fruit/berries on top.

    cuppa: flour, sugar, milk
    stick: melted butter

    pour in buttered pan. Plop fruit/berries on top, sprinkle with sugar.

    Bake at 375 for an hour.

    Its so hot here during the summer, I hate turning on the oven… so we do a lot of salads… grill chicken and add it to a salad, so many ways to mix it up too. Chicken Caesar and Asian Chicken are favorites here (kids love those two)

    I have a gluten allergy, so we do not make baked goods often in our house…a favorite summer recipe we have though is stuffed mushrooms: portabello mushrooms stuffed with spinach, garlic, and feta cheese…all fresh from our farmer’s market!
