I’ve been a Hungry Girl fan for a long time! If you aren’t familiar with Hungry Girl she is a life saver for “Hungry Chicks”, by taking the fattening food that we all love, indulge on and gain weight from, she creates recipes to allow you the same enjoyment… but in a less fattening way.

Here is a recipe from her latest newsletter that I’m aching to try! If you give it a try you will have to let me know how they turn out Smile

 

Mini Ice Cream Cakes

PER SERVING (1/12th of recipe, 1 mini ice cream cake): 136 calories, 3.5g fat, 131mg sodium, 22.5g carbs, <0.5g fiber, 14g sugars, 2.5g protein —PointsPlus® value 4*

These are SO cute and delicious you might find yourself making ’em for everyone’s birthday. (If you do, you’ll instantly become 37 percent more popular.)

Ingredients:

1/4th of an 18.25-oz. box (about 1 cup) moist-style devil’s food cake mix
1/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
1 tbsp. mini semi-sweet chocolate chips
3 cups light chocolate chip ice cream (vanilla with chocolate chips, like the kind in the Dreyer’s/Edy’s Slow Churned Light line)
1 1/2 cups Cool Whip Free, thawed
2 tbsp. sprinkles

Directions:

Preheat oven to 350 degrees. Line the cups of a 12-cup muffin pan with baking cups; set aside.
In a large bowl, combine cake mix, egg substitute, and 1/2 cup water. Whisk until completely blended.
Add chocolate chips to the bowl and gently stir. Evenly distribute mixture among the cups of the muffin pan. (Cups will be about one-third full.)
Bake in the oven until a toothpick inserted into the center of a cupcake comes out mostly clean, 20 – 22 minutes.
Let cupcakes cool completely, at least 30 minutes.
Remove cupcakes from the pan. Evenly top cupcakes with ice cream, 1/4 cup per cupcake. Evenly top each cupcake’s ice cream layer with 2 tbsp. Cool Whip and 1/2 tsp. sprinkles.
Transfer cupcakes to a large platter that will fit in your freezer, or place them back in the cooled muffin pan.
Freeze for at least 1 1/2 hours, until ice cream is firm and Cool Whip is frozen. Then eat!

MAKES 12 SERVINGS

HG Tip!
If frozen for longer than 1 1/2 hours, allow cupcakes to slightly thaw before eating, about 5 minutes.

    No way!!! I LOVE LOVE LOVE ice cream cake. I never thought to make my own, cupcake style. And these are lower calories, double bonus! Mmm…I think I know what I’m making for the next birthday around here.

    I am not familiar with “Hungry Girl”. I will check out her website. These little ice cream cakes are so cute. Just the perfect size to enjoy, but not feel guilty over.

    I will have to make these!!! They look perfect for kids, and so easy to make!!! I tend to be awful at decorating cupcakes so these will work!

    Thanks for posting this! I have never heard of Hungry Girl! My husband and I are both trying to loose a few pounds, so this will be great! Going to check out her site right now!!

    chocolate! yummy Lol ! I like this idea have a little indulgence without the guilt. I think we all deserve it with the kids ,husbands and etc.

    I too am a Hungry Girl fan…make that fanatic! I learned about her from a friend at work who also does Weight Watchers. Hungry Girl helped me lose 50 lbs. in 2011. I recently tried this recipe and it is soooo good!

    Thanks for this recipe! I’ve been following Weight Watchers since the end of August 2011 & have lost a little over 28 lbs & hope to reach my goal weight by summer. I love Hungry Girl & the fact that this recipe has the WW Points Plus value as well.

    Same enjoyment with fewer calories? Genius. Why have I never heard of Hungry Chicks before? I wonder if I could add some protein powder into this recipe…My son doesn’t get enough so I’m always looking for ways of sneaking in more protein.

    If I am going to make something like this, I would use my own homemade ice cream, real eggs, and real whipped cream. If I am going to indulge, I will indulge all the way.
