Having food allergies in the house can make it hard to enjoy holiday baking. My son is allergic to peanuts and tree nuts, this makes it hard for him to consume many baked goods.

The best part about holiday baking in our home is the ability to modify recipes so our little guy can enjoy the holiday treats too.

One of my favorite recipes to make during the holiday times is Banana Nut Bread. This recipe is so perfect because it can be made with or without nuts!

(While they are tasty without nuts, I would totally recommend them with Diamond of California Nuts)

There is nothing like a moist, fresh, buttery, and delicious muffin right out of the oven. These Banana Nut Muffins are not just any muffin, not like you would get from a coffee shop, or prepackaged from the store.

Homemade Banana Nut Muffins made with Diamond of California Nuts are a little slice of heaven that you could use to start your weekend morning. The aroma from baking Banana Nut Muffins is almost just as good as eating them. You. Must. Try. Them!

What you Need:

  • 4 – Overripe Bananas
  • 1 Cup Sugar
  • 2 Cups All Purpose Flour
  • 1 1/2 Tsp. Baking Soda
  • 1/2 Tsp. Salt
  • 3/4 Cup Unsalted Butter, melted
  • 2 Eggs
  • 1 Tsp. Pure Vanilla Extract
  • Package of Diamond of California, Finely Diced Walnuts

Instructions:

Preheat the Oven to 350 degrees

In a bowl combine these ingredients: Flour, Baking Soda, and Salt. Then set aside.

In a stand mixer with the whisking attachment, combine the bananas and sugar together until well mixed. About 3 minutes. Then add to your banana mixture: Melted Butter, Eggs, and Vanilla. Then slowly add in the dry ingredients until combined. Do not over mix.

Either grease or line your cupcake tray. I like to use non stick spray, but be sure not to spray until you are ready to pour the mixture into the pan.

Spoon the muffin batter into the muffin tin, filling them about half way. Then cover the tops of the batter with your Diamond of California Finely Diced Walnuts, don’t be shy! The more the better.

Bake for about 18-20 minutes, until a toothpick can be inserted and then pulled out clean.
