Gluten Free Rainbow Waffles (Nut Free Too!)

Waffles are a treat here any time, but I have upped the ante in this house with Gluten Free Rainbow Waffles! Using Betty Crocker’s Gluten Free Bisquick, I whipped up these bright breakfast goodies pretty fast!

B was excited for waffles but was even more delighted when I asked him to help make the colors.

The batter was mixed for a bath of waffles in a big bowl. I spooned a bit of batter and 6 drops of food coloring in a sandwich bag and sealed it up. I handed him the baggies to mix in the coloring.

I snipped a corner off of the bag and squeezed the colored batter in the waffle iron.

With a round iron it would be easy to make that semi-circle traditional rainbow shape.

I used some whipped cream for clouds and gave B his plate. He smiled and squealed and laughed. What an excellent way to start the day!
I had so much fun making these and of course now he’s asking for them for lunch!

It does make breakfast a bit more festive! You could put a couple drops of green in milk served with it, too!

It really is! You could probably make the batter ahead of time and just refrigerate it overnight making the morning go even smoother!
