One of the many things I associate with the transition between summer and fall, is the food. Summer is usually filled with lots of light, quick and easy meals that we can eat on the go. Because the weather is so hot during the summer months, I try to keep the oven usage down to a minimum.

During the fall and winter, however, the kitchen gets more than its fair share of use. The family is inside more often during this time of year, and it’s nice to cozy up around the table with a nice, warm, home cooked meal.

Since sitting around peeling and cutting potatoes for endless amounts of time isn’t one of my favorite pastimes, I use Simply Potatoes.

Cheesy Potatoes Cowboy Casserole

Ingredients

  • ½ tsp pepper
  • 1 tsp salt
  • ½ tsp all purpose seasoning
  • 1 package Simply Potatoes Diced Potatoes with Onions
  • 1 can of cream of mushroom soup
  • 1 lb ground beef or ground turkey - browned & drained (we used 99% FF Ground Turkey)
  • 1 can of diced tomatoes with liquid
  • 1 cup canned corn, drained
  • 1 can dark red kidney beans, drained
  • 1 cup of shredded cheddar cheese

Instructions

  1. Brown and drain your meat. Add the meat and all of the ingredients, minus the cheese, into the slow cooker. Cook on high for about 4 hours, or 6-7 hours on low. Then, add your cheese on top and cook for an extra 30 minutes.

Tip : Line your slow cooker with a slow-cooker bag, it will help tremendously with cleanup!
