Baked Pineapple Chicken Recipe

This recipe for Pineapple Chicken is a family favorite my Mother used to make when we were kids. To this day if I don’t let my sister know I’m making it she’ll be very upset I didn’t invite her over. I’m a saucy kind of girl so I like to double the sauce recipe to ensure plenty extra to pour over my rice. Pictured is double sauce.

Baked Pineapple Chicken Recipe

Pineapple Chicken Ingredients

  • 4 or 5 large pieces of boneless, skinless chicken
  • 2 eggs
  • 2 cups flour
  • garlic salt to taste
  • 1 8oz can chunk pineapple
  • frying oil

Sauce:

  • 3/4 cup white sugar
  • 1/2 cup vinegar
  • 1/4 cup pineapple juice
  • 2 tbsp soy sauce
  • 3 tbsp catsup
  • 1/2 tsp salt

Directions

Mix flour and garlic salt in bowl or shallow dish.  Beat eggs in another dish.

Slice chicken into bite size pieces. Dip chicken pieces in eggs, then coat in flour mixture.

Fry coated chicken pieces in hot oil. You’ll need to do this in several batches. Lay on paper towels to soak up excess oil.

Baked Pineapple Chicken Recipe

Prepare the sauce by mixing all of the ingredients in a sauce pan and cook to boiling. Lay fried chicken pieces in a large shallow baking dish and pour sauce over the chicken. Bake in oven for 30-40 minutes at 325 degrees.  In the last 10 minutes of baking add the chunk pineapple.  I like to serve it over steamed white rice.                                 

Serves 4-6 people.
